Mama Lou's Breakfast Ball Biscuits & Gravy
I've eaten a lot of meals in my life. Fancy ones, quick ones, and plenty that came off a paper plate. But the food that sticks with you is the food you grew up on. The food that filled you up and didn't try to be anything it wasn't.
This right here?
This is that kind of food.
Mama Lou's biscuits and gravy were never about measurements or making it pretty. They were about feeding people. If you were hungry, you ate. If you weren't hungry, you still ate.
I like my breakfast the same way I like everything else—simple, bold, and done right. Hot biscuits, sausage gravy, and enough flavor to let you know you're alive. No shortcuts. No nonsense.
The seasoning makes the difference. Mama Lou's Daly Seasoning comes straight from her way of cooking. It's not fancy, it's not complicated—it just works. A little goes a long way, and once you taste it, you don't need anything else.
Mama Lou's Breakfast Ball Biscuits & Gravy
Ingredients
- 8 biscuits
- 1 lb breakfast sausage
- 3 tablespoons flour
- 2½ cups milk
- 1½ teaspoons Mama Lou's Daly Seasoning
How I Make It
First thing, get the biscuits in the oven. You want them hot when the gravy's ready. Cold biscuits don't cut it.
Grab a skillet and cook the sausage over medium heat. Break it up and let it brown. Don't rush it. Brown sausage tastes better—end of story.
Once it's cooked, sprinkle the flour right over the sausage and stir it in. Let it cook for about a minute so it doesn't taste like flour.
Slowly pour in the milk, stirring the whole time. Add Mama Lou's Daly Seasoning and keep stirring until it thickens up the way you like it.
Turn the heat down and let it sit for a minute. That's where the flavor settles in.
Split the biscuits, put them on a plate, and pour the gravy over the top. Don't be shy. This isn't diet food.
One Rule I Stick To
"If the gravy's not thick enough to stick to the biscuit, it's not done yet."
That's Mama Lou's cooking.
That's how I eat.
And if you've got leftovers, you didn't make enough.
